Blackened Salmon

Salmon Blackened
Blackened Salmon
Remove skin from salmon
Pull out pin bones
Lightly oil salmon
Liberally sprinkle with *Blackening Seasoning
Preheat pan (preferably cast iron skillet) over medium high heat until oil is shimmering and just smoking
Place salmon into pan and cook 2-3 minutes per side (turning only once) until salmon is nicely blackened and flakey
Serve immediately
*Blackening Seasoning
1 tablespoon paprika
2 tablespoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon basil
1 teaspoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon ground black pepper

Brussel Sprouts
(6-8 sprouts per serving)
Trim ends of brussel sprouts
Then boil in lightly salted water for 5 minutes
Drain and blanch
Cut sprouts in ½ (or ¼ if they are big)
Slice onion (1/4 large onion per serving)
Toss sprouts and onion in a bowl with 2-3 tablespoons of oil to coat and
Add 2 teaspoons of *Montreal Steak Seasoning (or just salt, pepper or your favorite spices)
Cook in hot pan for 6-8 minutes stirring occasionally until tender and nicely browned
*Montreal Steak Seasoning
1 T Paprika
1 T paprika half sharp
2 T kosher salt
1 T power powder or flakes
1 T Onion powder or flakes
1 T Coriander crushed
1 T Dill seed
1 T red pepper flakes or ½ to 1 t cayenne pepper
1 T mustard seed crushed
½ T thyme
1/T rosemary

Rice and Quinoa Mix
Cook rice and Quinoa separately
Use your favorite rice and cook according to directions
Cook Quinoa according to directions
Mix Rice and Quinoa together for a nice starch side dish

Texas Chili

Texas Chili Ingredients

In a very large heavy pot (heavy cast is a good choice)
1 pound ground beef
1 pound ground pork
Brown beef and pork in a bit of oil at medium to medium high then drain and sit aside

3 links andouille sausage – coin sliced
1 package kielbasa sausage – coin sliced
Cook andouille and kielbasa for a few minutes remove and sit aside

2 large onions – chopped (somewhat course)
2-4 jalapeno peppers - diced
2 serrano peppers – diced
Cook at medium high in some oil and unsalted butter (unsalted doesn’t get scorched as bad at higher heats) until slightly brown and softened about 10 minutes or so then add
6 cloves garlic – thin sliced or crushed if you’d rather
And cook on medium to medium high for a few minutes more then add roasted peppers to warm

2 yellow chili peppers – diced
1 poblano pepper – diced
2 Anaheim peppers – diced
Roast these first (on the grill works well fairly high heat about 5 minutes per side until blackened, place in a plastic bag to steam for about 10 minutes, remove the skin) (if you don’t wish to do this add a couple of cans of diced green chilies) (also hatch chilies in season are great roasted in this)

Return all meat to the onions and peppers along with
2 tablespoons chili powder
2 teaspoons New Mexico Anaheim chili powder (or your favorite like Chipotle or Ancho)
1 ½ teaspoons ground cumin
1 teaspoon adobo powder
(no big deal if you don’t have this you can make it be using the following – 1/4 teaspoons of onion powder, garlic powder, cayenne pepper)
1 teaspoon whole coriander – crushed
½ teaspoon yellow mustard seed – crushed
2 teaspoon Mexican oregano flakes
1 tablespoon salt
2 teaspoons ground pepper
Mix well and cook for a few minutes then add

1 large can whole tomatoes – chopped
1 can Rotel tomatoes
1 cup water

Heat to boiling then cover, reduce to simmer and cook for about an hour (check the taste adjust if necessary)
then add
1 can red kidney beans – drained
1 can pinto beans – drained
You may need to add a bit more water depending on the consistency and add

1 cup Minute Rice
Cook for another hour

Serve with Fritos, chopped onion, chopped pickles, grated cheese and tortillas if you wish

Drop Meat Balls and Pasta

Meatballs (drop with sauce)

Meatballs
22 saltine crackers
1 Cup milk

1 lb ground beef
1 lb ground pork
2 ounces (1 cup) grated parmesan cheese
1 t garlic powder
1 t oregano
1 t salt
½ t pepper
(also if wanted thyme, basil etc to the meatballs) … this helps the taste
Saltines in zip-lock bag and crush with rolling pin
Mix crackers with milk and let stand 5 minutes then mash with fork to form a paste
Mix meat and remaining meatball ingredients in a bowl
Moisten hands and form about 24 meatballs (1/4 cup or less each)
Cover and refrigerate until ready to cook with sauce

Sauce
¼ cup olive oil and butter combined
1 onion diced (you can use two if you want)
(2-3 diced carrots diced fine optional) do this
(2 celery stalks diced fine optional) do this
10 cloves garlic peeled and smashed
½ t red pepper flakes (if you like it spicier add up to 1 t)
2 cans (28 oz) of crushed tomatoes
Salt and pepper

(can add other spices if wanted) so this is where you can put in about) 1 t (small t is teaspoon, large T is tablespoon) each of dried Basil, Oregano, thyme, Italian seasoning into the sauce)
Heat oil and butter over medium heat add onions (and carrots and celery) and cook until soft remove and set aside add additional oil / butter if needed (cook these in a bit of salt and pepper and at the end incorporate those other spices from above
Add garlic and heat until golden brown about 10 minutes
Add pepper flakes and cook for 1 minute add back in onion mix
Stir in tomatoes
1 cup red wine (pro tip drink the rest while cooking)
stir and add
meatballs nestled in sauce
cover and cook in oven for 1 ½ hours or at 350 for 2 ½ to 3 hours at 275 (you can adjust the timing based on oven temp… I think the lower heat and longer cooking time is a help)
after the first hour and then once every 45 minutes are so open and stir gently,
toward the end taste and adjusts spices as needed with additional salt and pepper and up to1 t of oregano, thyme, basil
cool uncovered for 15 minutes
serve over pasta sprinkle over fresh basil and parmesan cheese

Rosemary Bread

Bread (Rosemary – almost famous but not quite)
Makes 4 personal size loaves
Ingredients
• 1 ¼ oz package Active Dry Yeast (be careful there are different kinds of yeast)
• ¼ C warm water (use instant read thermometer 110 to 115 degrees)
• 2 t sugar
• 2 T extra-virgin olive oil, divided, plus more for brushing later
• 2 ½ C flour, plus more for dusting and getting consistency correct
• 2 – 4 T fresh rosemary
• 1 t fine salt
• ¾ C warm water (110 to 115 degrees)
• ½ t kosher salt
• ½ t pepper
o (notes small t = teaspoon, bit T = Tablespoon, C = Cup)
Directions
• Stir yeast, sugar and ¼ C warm water in large bowl (or large stand mixer bowl is you have a good stand mixer with kneading attachment otherwise you will hand knead, also don’t use a cold bowl make sure it is warm also) Let it sit until active and foamy 5 minutes or a bit more
• Add 1 T olive oil, flour, rosemary, fine salt, ¾ C warm water, stir to combine and mix until dough forms
• if hand kneading … turn the dough out and knead, turn dough out onto a lightly floured surface and knead until smooth and elastic, which will take about 10 minutes or so, if it is sticky while kneading dust with more flour and you may have to dust a few times…
• if using a stand mixer… use dough hood and medium high speed adding flour as needed if dough sticks to the sides about 8 minutes then turn out onto floured surface and knead for a couple of minutes adding flour to get to the proper consistency (smooth and elastic and not sticky)
• Brush a large bowl with olive oil, add the dough and cover with plastic wrap and let stand at room temp until doubled or more … about 2 hours
• Brush a large cookie sheet (not a dark one, and you don’t have a large sheet you might need two smaller ones) with olive oil. Generously flour a work service, turn out the dough onto flour and then divide onto 4 pieces by cutting.
• Work one piece at a time, sprinkle flour onto dough, fold the top and bottom to the middle, fold in the sides making a nice loose ball, place seam side down onto greased cookie sheet, keep them separated you don’t want them touching.
• Let stand uncovered for about 2 hours until doubled in size
• Preheat oven to 400 degrees, bake loaves for 10 minutes, then brush with olive oil and sprinkle with kosher salt return to over and bake until golden brown about 10 more minutes.
• Serve with butter or oil seasoned with salt, pepper, rosemary, parmesan, red pepper flakes etc
• Delicious

Pasta House Salad
This is the salad we had with the meatballs

(Makes at least 8 servings so you may cut in half)
Salad:
• 1 head iceberg lettuce
• ½ head romaine lettuce
• 1 cup/can artichoke hearts (quartered or eigthed – drained (not marinated hearts)
• 1 cup sliced red onion
• 1 cup diced pimento (drained)

Dressing:
• 2/3 cup olive oil
• 1/3 cup red wine vinegar
• 1 teaspoon salt
• ¼ teaspoon black pepper
• 2/3 cup grated parmesan cheese

Instructions:
• Mix dressing in shaker – set aside.
• Tear lettuces into pieces – mix together in large bowl.
• Add red onion – mix well.
• Add well drained artichoke hearts and pimentos – mix well.
• Just before serving, toss salad with dressing.

My First Time Out as Wilamina

I thought it’d be a good idea to share with you the first time I went out as Wilamina. Some of my friends have asked about this and many gurls on this site are intimidated about the idea of stepping out into the real world. I hope this helps some of you step out.

I, like many I suppose, started out in the fantasy world of dressing in the closet, in secret, and alone. I have always loved to dress up and to put on makeup, hose, panties a bra and imagine the possibilities. Playing games with myself in lingerie and just fantasizing. This is great fun after all. The next step …

I met with a dominatricis in real life for a while, I was her sissy slut. Oh, yes that was fabulous. I would fully dress, makeup, wig, the whole nine yards. We had fun, and I learned a lot about myself from our sessions. I owe her a big debt of gratitude. I would go out and bring her luggage into the hotel room. Ignoring the stares around us. The session you can read about in one of my other posts if you wish.

I began to desire to go out and see the world and so I did some research to determine the best places to go here in the Phoenix area. It turns out there are places to go off of Indian School and around the 7th street and avenue areas. I also discovered Glamour Boutique dot com and bought a few necessary items to help complete the look. Silicone breasts, hip pads, etc. I shopped for new clothes and shoes. DSW is great for shoes, Dillard’s, Macy’s, Penney’s, Goodwill are some of the places I love to shop, try on clothes and have fun in the moment. I get most of my makeup at Walmart, good prices and lots of selection and spend time on-line watching makeup tutorials. This does pay off, lots of great tips and tricks there. But yet I digress … back to my first night out.

I shaved everything, cleaned up everything, donned my make up (see an upcoming make up blog for an outline), wig, boobs, panties, hose, dress, heels, perfume (I just love wearing perfume) and was ready. Yikes, did I look okay, no way I’m passing (well in pitch black maybe), and headed out to Cruisin’ 7th. I drove down feeling some trepidation, some excitement and some wonder in that I felt comfortable and completely at peace.

I walked in, well I started to and some guys across the street whistled at me and asked if I wanted to come over, that was a bit disconcerting but I ignored them, then walked in. I was a bit early (around 8:30 or so) as so it wasn’t very crowded. I set at the bar and had a drink. The people behind the bar were fabulous, so friendly, so nice and so completely accepting. It turns out that on the first Friday of the month there is a blues band there, I strutted over and took a set at a table to watch the band. Everyone was so friendly and kind, people came up to me to chat (not to pick me up necessarily just to talk) I met some wonderful people and felt right at home.

I was rocking this short black dress (I still love that dress, see pic of me now in that dress), and my new boobs, I felt great. I still feel that feeling each time I dress; I love the way it transforms me. And not just because I look so much better as a gurl, but the way it makes me feel. It transforms my persona, it completes me, and I become what I was meant to be. Oh don’t get me wrong, I am content with my equipment and I’m going to keep it, after all it was a present from my mother. I am very, very happy to be a t-gurl and all that goes with it. I like myself so much better now and especially when I’m dressed.

Bottom line I had a fantastic experience and have loved to go out ever since. I go out when I can, and when you do you also begin to get a better sense of self, how to carry yourself, get practice with the makeup and have a better idea how to be the gurl you wish to be.

A great place to start is to join the Meetup group Arizona Transgender, great gurls there, and they go out at least once a month. In mass with them is an easy way to ease to trepidation and anxiety of your first time out.

As I write this today I'm removing my nail polish and putting away the Wilamina part of my life for a few weeks. Ah this saddens me, but it is what it must be at this time.

Being Wilamina completes me, makes me whole, I feel sexy, feminine and it morphs my personality to the natural place. When I am Wilamina all is write in my world. I'm happy, I'm free and I simply am, well, me.

I've had the luxury of being alone for the past week, fully dressed each and every day, the bliss, the freedom and the joy of being a woman. But I digress, the is supposed to be about how my wife discovered me.

I would dress in secret, when she was out of town, when she would be gone shopping for the day, just when I could. Hidden stashes of makeup, clothing and lingerie. After some time she begin to get suspicious.

"You are having an affair, who is your girlfriend she accused me." I am not I responded. She would not let it go, someone was in my makeup drawer (yes I thought that was me) there is makeup powder all over the place, what about this hair. On and on it went. Like a with a bone, she would not relent. Get out she said or tell me the truth.

Oh, okay, I thought it couldn't get worse could it. I'm not having an affair I said. Let me show you. I showed her pics of me dressed, happy and being Wilamina. Stunned silence followed. Well that's not what I expected she said. I just don't know what to do or what to say. Then she began asking questions.

"How long has this been going on?" Well I said I always liked dressing, but couldn't risk it while I had a high profile job, now I'm retired, I can do as I please so I do.

"Why?" It completes me, makes me whole, I love who I am as Wilamina.

"Wilamina?" Yes Wilamina, I love the name (my middle name is William) and it transforms me to where I want to be.

"I don't understand, why?" Look it's not about you or because of you, it's about me, it's about who I am. It balances me, resets me, and makes me happy.

"I was going to ask you to leave, now I don't know what to do?" I'm who I've always been, I'm just able to express myself fully. I hope we can stay together.

"Show me your stuff." I got out my dresses, outfits, makeup, jewelry and showed her.

"I won't watch you dress, or see you this way." Oh, well, I will let you know when I need to dress, when I'm going out and you can go shop or go into another room

"Do you feel better? she asked" Yes I do, thank you so much for understanding, for letting me be me (at least from time to time).

She asks me when I'm going out and tells me to have a good time. She doesn't really want to know much about it, but is generally supportive and understanding.

Ironman 70.3 Tempe

5:54:39 that was the time of my Ironman 70.3 finisher time. I’d been training for this race for about 10 months now. I hadn’t competed in a race of this distance for 15 years. So this 1.2 mile swim, 56 mile bike and 13.1 mile run (70.3 miles) was close to home and was purported to be good race.

Race check in was at 5:00 AM, and so my day started at 3:00 AM with a light breakfast of oatmeal and banana, fretting over “did I remember to pack everything in my sports bag” and hoping for a good day.

Check in went smoothly, everything was in order and after a few bathroom breaks (always a necessity on race morning when the getters and nerves take over) and laying out my gear in the bike transition area it was time to exit transition for all triathletes at 6:15.

The race starts with the swim, a 1.2 mile swim in waves; my race wave didn’t start until 7:32 to a long time to wait while wave after wave of swimmers was sent off into the cool water. Waiting and watching, sitting in the cool morning air, I had to put on my wet suit to stay warm, rats that what I forgot a sweatshirt. Finally my heat of 55 and over men (it sucks to be in the oldest group there) was in the water, it was an in water start, so you swim out to the start line and wait, treading water for 6 minutes or so until the gun. Finally we’re off. These starts always are a challenge as those 200 or so old men thrash about, jockeying for position and a lane of clean water, finally after being splashed, kicked, ran over, and running over others in the frenzy, I was in clean water after about 5 minutes. One swims along the buoy line, it was an out and back swim, heading out dead east into the morning sun, shinning off the water and into your eyes, there was no seeing, no sighting ahead to buoys, just the glare of the sun. A tough way to start the first half of the swim, stroking and sighting into the sun, not being able to see, hoping you weren’t veering too far off course. Finally the red buoy was there, my signal to turn left, thank god away from the sun and cross to the next red buoy for the return trip, it was such a blessing to be able to see again and sight to buoys. A good thing too as the wind was pushing me out away from the buoy line; I kept fighting to stay along the line and having to adjust my swim line constantly. Finally I was seeing the final red buoy to turn into home and up and out of the water. After that 1.2 mile swim (44 minutes, not bad for me, not the best but just under my goal time) you strip off your wet suit on the run to the transition area and the bike (no gurls not complete nudity just down to my race suit).

A quick donning of the helmet and bike shoes and off for the bike course, running through the transition zone with my bike and then jumping on for the ride; it was a 3 loop 56 mile course. My goal time was 3:15 so about a 17 mile per hour average. The course was relatively flat and the wind was at bay at the start of the ride. It was a tight course, usually running only one traffic lane wide. Enough room for one bike to pass but usually not two, well with 2,000 triathletes on the course not nearly enough room, so constantly checking before the pass and watching for those really fast bikes passing; there were lots of hair pin turns and other sharp corners. Yuck. Well the course is good for spectators as they get to see the cyclist several times. My first lap was fast completed in 58 minutes, yikes I could already feel it in my thighs. I could feel the road and every bump coming up through my rear tire, please don’t let me flat, please don’t let me flat. My second lap was in 59 minutes, meaning I was averaging 19 miles per hour, a fast pace for me. Too fast I was wondering, could I keep this up and complete the run? It’s all about the run. I was out of Gatorade and had to dump my polar bottles at mile 42, picking up course provided Gatorade and water. During the ride it is very important to hydrate, consume calories and electrolytes, as your body cannot sustain the pace and demands required to complete the race without this very important and hopefully well thought out portion of the race plan. As it turned out I was one gel pack short of what I really needed, but my electrolyte tabs and bars got me through. The final lap was a bit tough, the wind was picking up and my lets were burning a bit, a few slight twinges of cramping, more electrolytes and more Gatorade to stem the cramping, I was feeling the road more and know I was getting a flat, a slow leak in my back tire, 10 minutes to stop and change of press on, press on it was, a tough final 5 miles but I made it in with a time of 1:03, not bad just 3:00 hours total. Way under my goal time.

I came into the bike to run transition, changed into my racing shoes, hat, grabbed my nutrition belt and was off. If I could hold my run I knew I’d have a good race. The run course circled Tempe Town Lake twice, two loops just a bit over 6.5 miles each for a 13.1 mile run. The clear skies, were clean, the sun hot at somewhere in the 90’s and no shade whatsoever on the course. I was running well, but negative thoughts always seem to creep in on the run, 4 hours into the race, tired legs, high heat, and twinges of cramping, let’s just walk. NO. No walking, if you start to walk your race is done; you lose your adrenalin, and your energy and your will. And that’s it a long day of slogging, trotting, walking, slogging, cursing, wondering why you ever thought this was a good idea, and feeling bad about yourself for months for quitting.

There was no quitting, too much training, I’d been working on my mental toughness for a while now, some short prep races, visualizing the run and what it would feel like during those long hours of training and I pushed through. I met up with a really nice guy, his name was Troy early in the run, I started a bit faster than him ran with him a bit then surged ahead, but about mile 3 or so I was getting a cramp in my hamstring and had to slow, I crammed in electrolyte tabs, gel packs and worked through it. Troy caught me about then and we ran side by side the rest of the race. It was such a blessing; it helps tremendously having someone running with you pushing you, you pushing them through bad patches. Water stations every 2 miles with water, ice, Gatorade and other nutrition. The water was cold, a sip in your mouth and then over your body, ice in your hat and down your race suit to keep cool as best you can. We clipped along at a respectable 9 minute per mile pace, not great but not bad based on the heat and the strong bike. My legs held up well, just twinges, no major cramps, I could feel them burning and the lactic acid building up. The first lap complete, Troy and I motored around the second lap keeping a steady pace, passing people, counting off the age groupers in our respective age groups (he was 51) and using that as motivation. I know we passed at least 15 to 20 of our own age groupers and 150 to 200 other athletes on the run. So many people can’t complete the run. Motivation to keep on moving, keep the pace, mile 7 marker, mile 9 marker, mile 11 marker around the corner and 2 miles to go. I was hurting but in a good way, I know I could make it, it felt no worse that my long weekly runs at the end. I’d fueled properly, I had it in me. Go if you want to Troy said, no I’m good right here, I’m happy with this pace. But the next mile I was getting antsy, I wanted to get it over and took off a bit faster, you’ve got this last mile, go. So I kicked it in the best I could, and pushed my way to the finish passing a good number of walkers and slower runners. Then the finish shoot and the race end. Elation. I’d made it, the run in a tough over 2 hours, not great bit just a minute over my goal and way, way under my race goal. 5:54:39, numbers I won’t soon forget.

Oh, yea I’m supper sore today, walking, well tottering around like an old man. But the pain is worth it for the accomplishment, and doing it in a way I could be proud off. Capping off my race with a good run and completing what I’d set out to do those many months ago. 5:54:39 yahoo.

And no Wilamina could not race, but I was thinking about her, she’s proud too.
