White wines, especially Chardonnay, are capable of breaking the strong flavor derived from the ingredients used. I suggest you a wine aged in oak barrels like Chablis - Frances (you can choose any of them, whatever is best in your budget), they are fruity and with high acidity, which will be perfect for harmonizing your dish ......... now if you prefer a red wine, I suggest a Tomero Pinot Noir - Argentino / Mendoza, which is a light wine, also fruity, with an excellent cost benefit and quality.

Rather than a Merlot, consider a Nebbiolo from Barolo. If you can afford it, any of the Barolo Lazzaritos vintage 1999-2013 are ready to pour. If you're on a *budget*, a Pio Cesare is also a treat.
