 fudge is chemistry . the chemistry is very specific per trhe ingredients , the pan , the heat delivery the humidity ,the type of pan ,the stirring , it's more complex than you would think . i say look up elton browns recipe and scientific explanation for non perfect fudge . my mom made killer fudge .I have not eaten any in years ,i try to avoid sugar and boy it has sugar ...

 I make pretty good fudge , but I doubt it's worth giving up your soul for
