Sorry, not kind. I just threw a small batch of sausage into the smoker and hope to redeem myself for the previous one; also my first ever sausage. The first batch looked delicious, but was poorly executed and had the texture of sawdust in a casing.

But it looked good.

 wow i am partial to sausage but in saying that depends on how its done and seasoned..deer sausage so far won my heart around here

 Not to blow my own horn, because I still plan to tweak the process a bit, but holy fuck, they turned out delicious! I'd eat and serve these what are essentially hot dogs, all damned day. Kinda wish I'd not made such a small batch.
