Tuesday night dinner - Chicken w veg wine, bread pudding & apples, chicken soup


Tonight's dinner was chicken, vegetables, and a sauce, a tomato chicken vegetable soup, and bread pudding using apples and raisins.

Chicken with broccoli, artichokes, peas, and to make a sauce, white wine, chicken stock, butter, Italian seasonings. Delicious. I'm not fond of artichokes other than in some cooked chicken dishes. I buy frozen artichokes that are already sliced, frozen peas, fresh broccoli. I buy fresh broccoli when it's going for .99 for the flowers (head without the stalks).

I made a chicken tomato soup. I made broth from a rotisserie chicken I bought for Sunday night's dinner. After eating all the meat, then for Monday lunch making chicken salad from the little left over, I put the rest of the chicken, meat, bones, in a pot, covered with water and let it simmer for a few hours and then removed the bones, what meat was left went to the dogs for their meals for a few days. I then let it sit overnight in the refrig, scooped off the fat, then used the broth to make today's soup. I added celery, carrot, onion, garlic, oregano, thyme, garlic powder, celery salt, black pepper, salt, little crushed tomatoes from a can, and a diced chicken breast. Let it simmer until the carrots and celery were almost done then added some medium egg noodles, 15 minutes later, ready to serve. Grated some asiago cheese on top and served. It was delicious. And I have some left over for the next few days. It's rare a week goes by during the year that I don't have soup, summer or winter. I love soup. It's a great meal, it<b> supplies </font></b>all the nutrients you need, protein, carbs, vegetables, minerals, vitamins, water for hydration.

For dessert I made bread pudding using my "failed" sugar less forgot the sugar, eggnog muffins. I cut them up, put them in a 9"x9" baking dish, stirred in some diced stayman winesap apples and raisins, mixed up a custard mix of eggs, milk, sugar! vanilla. Then baked 1 hour at 350. It was so delicious when it was warm and it will be just as good as it sets overnight in the refrig. For a topping I could make a topping or a sauce. I could make a rum or Triple sec flavored sauce or make a whipped cream topping and flavor it with my choice of vanilla, maple, or Triple Sec - an orange liqueur, or Amaretto - an almond flavored liqueur. A topping always takes it up a notch and is the finishing touch.

Today I got my protein, carbs, and veggies. Got my protein and veggies with the chicken dish and the soup. Got my carbs with the soup and the dessert.
