pesto pasta...
pesto pasta A friend of mine once described a perfect evening as 'full stomach, empty balls". And it suddenly occurred to me that all of my posted recipes so far in this blog have been either appetizers or desserts!... Since it would shame me to leave any friend of mine hungry, I decided to post this little dish. It follows the general 'toothysmile' rules. It's quick and easy to prepare, perfect for the arrival of unexpected guests.
This serves 2, but if you simply double the dosage it will serve 4, etc...
ingredients - 2 portions of spaghetti - A jar of barilla [or any other brand] pesto sauce; if you feel really adventurous you can prepare your own pesto sauce, using basil, extra virgin olive oil, potatoes, lemon juice and maybe garlic... but for now let's do it the simple way - A jar of black olive paste [kalamata olives]. - Some mild mustard - Some balsam vinegar - A bowl of grated parmesan cheese
preparation - Take 2 soup spoons of pesto into a small bowl; add 1 soup spoon of black olive paste, then 1 soups spoon of mild mustard. Mix well by hand. Add just half a spoon of balsam vinegar; mix again and your sauce is ready. - Boil the water and prepare the spaghetti al dente. (this usually takes 10-12 minutes after the water has boiled, but instructions should appear on the spaghetti pack). Rinse once ready and serve the spaghetti in individual plates. - First add the parmesan cheese (to taste) to the spaghetti; stir. Then add the pesto sauce and stir again.
