I have meant to post many more recipes than I so far have in this blog. As it turns out, the last one I posted was way back in July 2006... with some umm... rather unpredictable results in terms of the comments I received!

I very rarely observe the traditional Greek holidays. In fact, my dietary habits include burgers, french fries and pizza more than the usual mediterranean cuisine. However, I occasionally remember my ethnic roots!.. I am posting this recipe because it is something we tend to eat at the beginning of Lent, which in our corner of the world starts on Monday, Feb. 19... what we call 'Clean Monday', in greek Kathara Deftera.

This isn't my own recipe. Nevertheless, as with everything I have suggested so far, it is quick and easy to make. It is an appetizer, a pink and soft creamy spread, that can be applied on bread or melba toasts, or served as a dip, accompanied by black olives and cucumber sticks. It is called taramosalata.

Ingredients

White bread: 3 slices, crusts removed
4 oz. (112 grams) of tarama (carp roe)
1/3 cup lemon juice
1 cup olive oil
Chopped parsley

Preparation

Water the bread, then squeeze the water out of it. Put the bread, the tarama and the lemon juice into a food processor, blend briefly. With motor running, gradually pour in the oil, blending until emulsified and thick. The result should be a smooth spread, light pink in color. Serve sprinkled with chopped parsley.

Note: you may not wish to add full amount of oil; check as you go.
