Toothysmile's pitas.
When I first started this blog, I thought I would be posting a recipe a month or so... Not because I am that great a cook [in reality, I basically 'prepare food', I don't 'cook'], but because I thought my recipes would be a nice addition to the 'other' carnal pleasures I would share with you.
Well... In 10 months I have posted only one. My happy stawberries. So, I think I am way overdue for another. Somehow it seemed apt after my grocery list to discuss my dietary habits. I like things that are simple and easily done, healthy and satisfying in taste.
This is an easy little dish I propose for you. It's rather Mediterranean, and it's not often that I observe my heritage!... [giggles]... Depending on how much you wish to have, it can be an appetizer or a main dish.
The ingredients. serves 4
-two large thick pita breads. -two- three eggplants depending on their size. -two onions. -one vase of sun-dried tomatoes. -one vase of Barilla pesto sauce. -one cup of grated parmesan cheese. -basil, parsley and oreganon. -a teaspoon of olive oil. [optional]
Preparation.
Slice the eggplants and the onions and grill them on an alluminum foil covered tray in the oven for 10-12 minutes, only on one side. [Optionally spread the olive oil on the pita breads' one side with a brush]. Grill the pita breads separately for no more than two minutes [with the olive oil facing up if you have chosen to do so]. Take the pitas out of the oven. With a spoon spread the pesto sauce on the ungrilled side. Arrange the eggplants over them, the ungrilled side facing up again. Place the sun-dried tomatoes and the onions over them, just like you would in a pizza. Grill in the oven for about 5 minutes. Take the tray out. Cover everything with the grated parmesan cheese and sprinkle with the basil, the parsley and the oreganon. Put the tray back in the grill and leave until the cheese melts. Take it out of the oven and serve while still hot.
You can either slice it like a pizza and eat it with your hands or cut the pitas in half and eat them with a knife and a fork.
Suggested drink
Any dry red wine will do.

Hmmm...everything else in the recipe sounds good but not the eggplant for me. Just doesnt do my tastebuds all that good. BUT! I'd definately still cook it for you! As long as "toothy's tummy" is happy! LOL!

Care to add it to the Bloggers Recipe book? We could always do with some more recipes there... (wont link it just incase but it's only a couple of posts old)
