toothy's lentil soup...
Lentils... This is for a dear friend. Some of you are already familiar with her. She is prone to flashing her derriere through the pages of these blogs. menteluminosa She is one of America's hottest exports. She lives south of the border (yes, down Mexico way). She is [blog menteluminosa]. She once mentioned that she would be putty at the hands of a man who could cook. I decided to rise to the challenge. If nothing else, out of sheer curiosity...
This is my recipe for a lentil soup. It is a very popular soup here in Greece. However, true to form, I offer my own twist.
Ingredients
-one 500 g (1.1 lbs.) bag of fine lentils (should serve 6) -olive oil -balsam vinegar -3 large onions -3 carrots -a batch of parsley -two cubes of vegetable broth -some worcestershire sauce -tobasco (optional) -100 g grated romano cheese -half a pack of melba toasts -100 g (about half a pound) of black kalamata olives. (optional)
Preparation
Empty the lentils in a kettle. Add 750 ml (24 oz.) of water. Heat at a medium fire. Bring to a boil. (While you are waiting slice the onions, the batch of parsley and the carrots and break the melba toast into smaller pieces). Place a sieve in the sink. Empty out the water and keep the lentils in the sieve.
Place the lentils back in the kettle and pour a fresh 750 ml (24 oz.) of water. Add at least two soups spoons of olive oil. One soup spoon of balsam vinegar. The two cubes of vegetable broth. One tablespoon of worcestershire sauce. (Optionally a dash of tobasco). Add the sliced onions and carrots. And the batch of parsley. Stir well. Heat again at a medium fire. Do not cover the kettle. Stir every few mintes.
Normally it should take about 45 minutes. Unfortunately this will depend on how "quick" your lentils are. So after the 30 minute mark you will have to taste them to see if they are ready. You want them to be soft but not mushy. Once they reach that point, they are ready to be served.
When you pour the lentils in each soup plate add one soup spoon of balsam vinegar in each plate. Stir. Pour the grated romano cheese over the lentils so it melts a little. Add the broken-into-smaller-pieces melba toasts. Then add the olives in a decorative pattern, if you so wish. Enjoy!
I'll be posting more recipes soon. What with the holidays coming up... and all those hungry mouths at the dinner table... come to think of it, there may be some hungry mouths in bed too... but that's the topic of another post!...
Suggested drink: If you can stomach it, try retsina, the Greek resin wine. Otherwise any dry wine would do. Also any red ale. Or any stout like Guiness. (Although I would opt for London Porter beer).

SandraD1000 well, it's never too late my dear sandra. disney world is nice, i've been there, but it's not among those 'have-to-do' things. and a lentil soup is easy and inexpensive. plenty of time for both...

MargotRegina79 i am very tempted to tease you about the sausage... i shall refrain... for now!
i don't have any recipes that include sausage... except for the pasta that you posted... i actually like it straight... or perhaps with eggs over-easy.

I must confess. I made a lentil soup a few days before your post and it turned out horrible. I will try your recipe next time.

menteluminosa my dear ms. lumi, there will always be a bowl of lentil soup for you at my place. and if there isn't, why, i would just go and make some...
yes, i use worcestershire sauce extensively, and yes, we have it here. you know where they don't have it?... paris! it's too english for them.

Opus_of_a_liar aww... well, i hope it works. those little lentils are dirty and tricky bastards... you never know how long they will take to boil properly, you have to keep your eye on them.
