RE-FRACTURED FAIRYTALES I had found him in Ireland. He said his name was Lack-Toes, and sure enough not only was he barefoot, his feet had but a single toe between them. (I wondered should I call him Shoeless Toe, but thought better of it). Anyway, Lack-Toes was intolerant. He despised foreigners and their strange wheys. And, while it was Gouda him to deign to talk to me, I could tell he had a Munsters heart. He lived in a Cottage, with his very kosher girlfriend, matzah-Ella. When I finally got him talking I grilled him for awhile, over some bread and wine. "It all began with Edam & Eve", he said. "They had all the right stuff. Cows. Goats. Sheep. Even buffaloes. It was a lot of work, though once they got through their daily rind, it was grate. Little else is known. If you truly seek to merge modern technology with ancient dairy you must go to Kurdistan. The Kurds will show you the way." So I went. And now, you find them together. As ubiquitous as apples.
